Smoked Salmon & Egg Breakfast Sandwich

Time: 20 minutes

INGREDIENTS:

  • English muffin, toasted
  • Garlic and herb cheese spread (we used Boursin)
  • Avocado, thinly sliced
  • Tomato, thinly sliced
  • Arugula microgreens 
  • Smoked salmon
  • Over easy egg
  • Quick pickled red onions
  • Capers
  • Fresh dill

INSTRUCTIONS:

  1. Toast 1-2 english muffins until golden brown (about 3-4 minutes per side). 
  2. Assemble your sandwich - add Boursin to both pieces of the english muffin, and top with avocado slices, tomato slices, arugula microgreens, smoked salmon, an over easy egg. Garnish with pickled red onion, capers, more arugula greens, and dill. Serve immediately and enjoy!
