Broccoli Tuna Salad Sandwich

Yield: 2-4 sandwiches

Time: 10 minutes

INGREDIENTS:

  • 2, 5oz cans tuna 
  • ¾ cup finely chopped celery (~2 stalks)
  • ¾ cup finely chopped carrots (~1 large)
  • ¾ cup finely chopped cup red onion (~½ large onion)
  • 1 jalapeño, diced small
  • ¼ cup cornichons, diced small
  • ⅓ cup chopped fresh cilantro
  • ⅓ cup mayo
  • 1 Tbsp dijon mustard
  • ¾ tsp salt, add more to taste
  • Black pepper, to taste

INSTRUCTIONS: 

  1. Mix all of the ingredients together for the spicy tuna salad.
  2. Serve on your favorite bread (we used sourdough) with lettuce, tomato slices, avocado, jalapeño slices, and microgreens.
  3. Enjoy!
