Coconut Curry Veggie Bowl

Yield: 1-2 servings

Time: 10 minutes


For the Bowl

  • One can Coconut Curry Chickpeas from Heyday
  • ½ cup pea shoots
  • 1-2 cup rice
  • Scallions, thinly sliced
  • Toasted sesame seeds for topping
  • 1 lime

For the Pickled Veggies

  • 1 cup apple cider vinegar 
  • 1 cup water
  • 1 Tbsp sugar
  • 1 Tbsp salt
  • Cucumber, thinly sliced
  • Carrot, thinly sliced


    1. Make the pickled veggies: In a small bowl, combine the pickle ingredients until thoroughly mixed. Set aside. 
    2. To assemble the bowl: add the rice, Heyday Coconut Curry Chickpeas, pea shoots, and pickled veggies. Top with scallions, toasted sesame seeds, and a squeeze of lime. Enjoy!
