INGREDIENTS:
For the Bowl
- One can Coconut Curry Chickpeas from Heyday
- ½ cup pea shoots
- 1-2 cup rice
- Scallions, thinly sliced
- Toasted sesame seeds for topping
- 1 lime
For the Pickled Veggies
- 1 cup apple cider vinegar
- 1 cup water
- 1 Tbsp sugar
- 1 Tbsp salt
- Cucumber, thinly sliced
- Carrot, thinly sliced
INSTRUCTIONS:
- Make the pickled veggies: In a small bowl, combine the pickle ingredients until thoroughly mixed. Set aside.
- To assemble the bowl: add the rice, Heyday Coconut Curry Chickpeas, pea shoots, and pickled veggies. Top with scallions, toasted sesame seeds, and a squeeze of lime. Enjoy!
